Loro sono una delle band che hanno influenzato di più molti complessi successivi, raggiungendo un buon successo nella fine dei Sixties. Si formano nel 1966 a New York e la line-up è composta da Mark Stein alla voce e alla tastiera, Vinnie Martell alla chitarra e alla seconda voce, Tim Bogert al basso e Carmine Appice, fratello di Vinnie, alla batteria. Il loro sound è un rock psichedelico molto energico e possente, genere che andava in voga in quel periodo con band come gli Iron Butterfly e i primi Pink Floyd. I Vanilla Fudge sono formati da musicisti di spessore e di grande tecnica, a partire dal formidabile ed innovativo batterista Carmine Appice. Lui è considerato come il primo batterista rock di sempre, perfino prima di John Bonham, Ian Paice e Keith Moon!! Nei Vanilla Fudge ha esperimentato nuovi grooves e grazie alla sua versailtà musicale riesce a suonare anche in modo semplice (sentite i brani "Young Turks" o "Do Ya Think I'm Sexy" di Rod Stewart).


"Psychedelic Sundae" è una raccolta di 18 successi uscita nel 1993 e comprende tutte le hit dei cinque album. "You Keep Me Hangin On" inizia con i formidabili assoli di basso e con la parte tastieristica, per poi cominciare con una sezione ritmica energica supportata dalla doppia cassa di Appice. La sezione vocale di Stein è melodica e piacevole, come anche il sognante refrain, mentre la parte finale della track è infarcita di pura psichedelia. "Where Is My Mind" è un buon pezzo, con un ritornello potente accompagnato dalla sempre ottima prestazione di Stein dietro la tastiera. Una canzone che ricorda un pò i primi Iron Butterfly. "The Look Of Love" e "Come By Day, Come By Night" sono delle track tranquille dove la band dimostra anche le sue ottime doti vocali, ovvero i "classici" coretti in falsetto tipo i primi Beatles. E la passione e la stima per i Fab Four è dimostrata dalla cover di "Ticket To Ride". "Take Me For A Little While" è caratterizzata da un testo un pò sdolcinato ed insolito per i Vanilla Fudge.

La settima traccia è "That's What Makes A Man" dove la voce squillante di Mark sfocia nell'ottimo ed emozionante refrain. "Seasons Of The Witch", cover di Donovan, è un brano che rimane per ben sette minuti in un'area surreale e marziale, con la voce delicata e a tratti sussurrata del vocalist. "Shotgun" presenta il lato più hard rock-blues grazie agli assoli di Martell e alla caciarona e dirompente prestazione di Appice dietro le pelli. "Thoughts" e "Faceless People" sono delle discrete canzoni, mentre con "Good Good Lovin" si ritorna sui paraggi dell'hard rock. Ottimi e sensazionali sono gli assoli e i riff di Martell che supportano la voce graffiante e carica di Stein. Lo volete sapere David Coverdale da dove ha avuto la brillante idea di scrivere un pezzo come "Ready And Willing" ??
"Some Velvet Morning" è qualcosa di spettacolare. L'inizio è affidato al sommesso Hammond per poi esplode nel suo riff insieme al pomposo basso. Successivamente trova spazio la voce delicata di Mark e i sensazionali cori nel ritornello orecchiabile ed emozionante. Dopo questo momento di pura ecstasy si arriva al soul melodico e sdolcinato di "I Cant Make It Alone" e alla bruttina "Lord In The Country". Forse quest'ultima traccia la potevano scartare, magari aggiungendoci la mancante "She's Not There"..
